The roses of Kannauj

Four hundred years, a copper still, and the reason rose absolute costs what it costs.

Kannauj is a small city in Uttar Pradesh, about eighty kilometres from Kanpur, and it has been distilling flowers for something like four hundred years. It is often called India's perfume capital, which makes it sound larger and glossier than it is. It is a working town that smells extraordinary.

We buy our rose absolute there. It is the most expensive line item in the Shea Rose and in the Rose bath salt, and it is the reason those two cost what they do. This is what the money is for.

The picking happens before dawn

Rosa damascena gives up its oil in the cool. By nine in the morning a meaningful fraction of what you wanted has evaporated into a field in Uttar Pradesh, so picking starts around four and is finished by seven. The flowers go to the still the same morning — not the same day, the same morning. A rose picked at dawn and distilled at noon is already a lesser thing.

The arithmetic is unkind and worth knowing. It takes somewhere in the region of three to four thousand kilograms of petals to produce one kilogram of rose oil. A skilled picker gathers a few kilograms in a morning. You can do the rest of that sum yourself.

Deg and bhapka

Kannauj still runs the deg-bhapka method, and this is where it stops being a supply chain and starts being a craft. The deg is a copper vessel — flowers and water — sealed with a paste of clay and cotton and set over a wood fire. The bhapka is a second copper vessel, half-buried in a tank of water, connected by a bamboo pipe. Vapour travels from one to the other and condenses in the cool.

There is no thermometer. There is no gauge. The distiller judges the fire by the sound of the deg and the feel of the bamboo, and adjusts by pulling logs out. A run takes six to eight hours and someone is awake for all of them.

Stainless steel and a temperature probe would be cheaper, faster and more consistent. It would also produce a different oil, and everyone involved knows it.

We have asked why, more than once, expecting to hear tradition. The answer we get is more interesting: copper does something to the chemistry, the clay seal breathes in a way a gasket does not, and the slowness of a wood fire is not a bug. It is possible that some of this is sentiment. It is also true that the oil is better, and we are not in a position to argue with the nose of a man whose family has done this for six generations.

Absolute, oil, water, and the thing that is none of them

Three products come off a rose and they are constantly confused, usually on purpose.

  • Rose water — the hydrosol, the water left in the bhapka. Lovely, cheap, and about one percent of the story.
  • Rose otto — the steam-distilled oil. Bright, slightly green, extremely expensive.
  • Rose absolute — solvent-extracted, deeper and rounder, closer to the actual flower. This is what we use.
  • Rose fragrance oil — a synthetic accord, made in a laboratory, costing perhaps one-hundredth of any of the above. It smells like rose. It smells like one rose, the same one, forever.

The fourth is not a fraud, and plenty of good perfumery uses synthetics deliberately. But it is not what we are buying, and when a soap at ₹200 says it contains rose, it contains the fourth. That is arithmetic, not cynicism.

Why our rose bars are not all the same colour

Because the crop is not all the same. A batch distilled in a wet April is a different oil from a batch distilled in a dry one, and we do not correct for it. The Rose Whip in your hand this month is a slightly different pink from the one your sister bought in February.
